What is shabu-shabu?

Have you ever eaten shabu-shabu?
Shabu-shabu is a Japanese-style hotpot dish where thinly sliced meat is briefly swished in a hot broth and then dipped into sauce before eating.

While many may associate shabu-shabu with beef, at our restaurant we offer “Fuji Spring Water Pork,” a brand of pork raised with mineral-rich spring water from Tsuru City, Yamanashi Prefecture, which has been selected as one of the top 100 famous waters of Japan. With its exquisite balance of tenderness and flavor, it is a masterpiece that will surely surprise you, so please give it a try.

We recommend wrapping the pork slices in cabbage and green onions and dipping them in our homemade sesame sauce or ponzu sauce. Alternatively, just dipping the meat in the hotpot broth will allow you to enjoy the original flavor of the ingredients. For those who want to experiment with different flavors, we also offer grated daikon radish, yuzu pepper, chili oil and more, so you can enjoy a combination of various tastes.

We carefully select seasonal ingredients and prepare each dish with care. In the shabu-shabu course, customers will choose and cook their own meat and vegetables. Our staff will kindly guide you through the process, so even beginners, or those not used to chopsticks, will feel welcome.
